DISTINGUISHING FEATURES OF THE CLASS

Under general supervision, an employee in this class oversees and monitors the records and activities of individuals and/or corporations operating food service or other concessions under contract to a Town.  The incumbent also ensures proper maintenance of facilities and compliance with all regulations.  Supervision is received from an administrative superior through conferences and oral and written reports.  Does related work as required.

 

TYPICAL WORK ACTIVITIES

          Oversees the contractual agreements with the food or other concessionaires of the Town.

          Serves as liaison between the Department of Parks & Recreation and the concession management.

          Prepares monthly and end-of-year financial and statistical reports on the concession operations.

          Makes periodic inspections of custodial and maintenance activities to determine whether they are being performed in accordance with mandated regulations.

          Maintains records of receipts and expenditures of the concessionaires' operations.

          Approves all special events and catered affairs that involve the use of the concession areas.

          Regularly checks the hours of operation, the menu, the quality and costs of the food served by all concessionaires.

          Follows up any complaints made about concession operations.

          Receives and keeps records of copies of the concessionaires' required permits from the Health Department, Labor Department, etc.

          Oversees general concession maintenance, compliance with licensing regula­tions and proper service performance.

 

FULL PERFORMANCE KNOWLEDGES, SKILLS, ABILITIES AND PERSONAL CHARACTERISTICS

Thorough knowledge of the operation and maintenance of a food service facility; thorough knowledge of restaurant management procedures and practices; good knowledge of financial record-keeping, especially as it relates to restau­rant operation; ability to analyse data and reach sound conclusions; ability to establish and maintain good working relationships with subordinates, supervi­sors, concessionaires, and the general public; ability to keep records and to submit satisfactory oral and written reports; tact; good judgement; physical condition commensurate with the demands of the position

 

MINIMUM QUALIFICATIONS

          OPEN COMPETITIVE

          Graduation from high school or possession of a high school equivalency diploma and five (5) years of experience in restaurant management.
