DISTINGUISHING FEATURES OF THE CLASS

Under general supervision, an employee in this class prepares and supervises the preparation of bakery products for the Suffolk County correctional facilities.  Supervision is exercised over a number of inmates.  Assignments follow set departmental policies and procedures and menus are prepared by the Jail Head Cook.  Does related work as required.

 

TYPICAL WORK ACTIVITIES

          Supervises inmates of the County Honor Farm and assists in the preparation of baked goods;

          Prepares bread, cakes, pies, jelly donuts, cinnamon buns and other baked goods;

          Measures flour, sugar, shortening and other ingredients to prepare batters, doughs, fillings and icings;

          Rolls, cuts and shapes dough;

          Cuts and wraps bread for transporting to other County institutions;

          Operates standard baking equipment;

          Supervises a number of inmates in maintaining the bakery in a clean and sanitary condition;

          Teaches the bakery trade to those inmates assigned;

          Accompanies inmates to the freezer for storage and control of shop materials;

          Locks and unlocks the gate between the kitchen and the bakery allowing inmates to enter and leave;

          Makes out reports on accidents and any disciplinary actions taken.

 

FULL PERFORMANCE KNOWLEDGES, SKILLS, ABILITIES AND PERSONAL CHARACTERISTICS

Some knowledge of large scale food preparation and baking methods; some knowledge of the different types of flour, yeast and shortening and the effects of humidity and temperature; ability to operate standard baking equipment and to use kitchen utensils for large scale food preparation; ability to supervise the work of inmates in a manner conducive to full performance; ability to maintain order and discipline among the inmates assigned; ability to keep records and make reports; ability to understand written and oral instructions; physical condition commensurate with the demands of the position.

 

MINIMUM QUALIFICATIONS

          Completion of eight (8) school grades, and either:

(a)   completion of an approved course of instruction in food preparation and baking; or,

(b)   six (6) months' experience in the preparation of bakery goods on a large scale; or,   

          Satisfactory equivalent combination of the above education and experience.
