DISTINGUISHING FEATURES OF THE CLASS

Under general supervision, an employee in this class assists the Jail Head Cook in organizing and directing the preparation and serving of meals in Suffolk County correctional facilities.  The incumbent assists in the planning and supervision of the work of employees and inmates engaged in the preparation, cooking and distribution of food.  Performance is supervised by the Jail Head Cook.  Does related work as required.

 

TYPICAL WORK ACTIVITIES

          Assists in maintaining inventory and ordering of all meat, vegetables, all other foodstuffs and equipment;

          Assists in planning and preparing all menus in accordance with dietary rules set by the Board of Health, Department of Corrections and Department of Agriculture; assists in maintaining records of same;

          Assists in maintaining kitchen and bakery equipment in proper working order;

          Assists in training and instructing cooks and bakers in preparation of daily menus as well as the proper supervision of inmates in accordance with Correction Law;

          Assists in maintaining accurate and complete records of incidents involving inmates assigned to the kitchen, equipment used by inmates and special diets prepared for inmates.

 

FULL PERFORMANCE KNOWLEDGES, SKILLS, ABILITIES AND PERSONAL CHARACTERISTICS

Good knowledge of the materials, methods and equipment used in large scale cooking; good knowledge of the operation of all standard kitchen equipment typical of a large institutional kitchen; good knowledge of the health hazards in large scale food preparation and the necessary precautionary measures; good knowledge of a large number of standard recipes; good knowledge of Correction Law as it relates to the supervision of inmates assigned to work in a correctional facility; good knowledge of New York State Health Department Laws and Department of Agriculture regulations as they pertain to correctional facilities; good knowledge of food values and nutrition; ability to supervise the work of others in a manner conducive to full performance and high morale; ability to keep records and prepare reports; ability to maintain order among the inmates assigned to work in kitchen and bakery; physical condition commensurate with the demands of the position.

 

MINIMUM QUALIFICATIONS

          Graduation from a standard senior high school or possession of a high school equivalency diploma, and two (2) years of experience in the preparation of food on a  large scale; or,

          Satisfactory equivalent combination of the above education and experience.
